Ingredients
a. 200 g. Boiled, drained and cut Red Pumpkin
b. 200 g. Boiled, drained and cut Potato
c. 75 g. Boiled, drained Green Peas
d. 150 g. Boiled, drained Shredded Carrot
e. 1 tsp Cummin Seeds (Jeera)
f. 1/4 tsp. Red Chilli powder
g. 1/2 tsp. Turmeric powder
h. 1 tsp. Amchur Powder
i. 1/2 cup chopped Cilantro
j. 75 g. Gram Flour (Besan)
k. 100 g. Rice Powder
l. 8 tbsp Oil
Salt to taste
Instructions
- Take a pan, add the boiled vegetables (pumpkin, potato, peas and carrot) and mash them.
- Add the jeera, red chilli, turmeric powder, amchur and salt and mix them well. Add the gram flour, rice powder and cilantro and knead into a dough. (If you do not have rice flour you may add all purpose flour). Do not add any water. Add 2 tbsp of oil and mix, The dough should not stick to your hand. If it does, you may require to add more rice flour.
- Cover the mixture with foil and keep in the fridge for 30 mins.
- Take out the mixture and roll 1 tsp of mixture into small irregular balls.
- Pour oil into a frying pan, heat on medium fire.
- Once oil gets hot, drop the rolled balls and fry them till light brown. gently remove from frying pan and place on a kitchen towel to drain the excess oil.
- Your pumpkin potato fritters is now ready to eat. Enjoy!
Hello, I made this recipe today and it’s delicious! I did substitute amchur powder with lemon juice and zest, and didn’t have cilantro so I used parsley. I did have all the other ingredients and so glad to use a big chunky of pumpkin I had! Thank you ☺️
