Garbanzo beans with spinach.
Ingredients:
1 can garbanzo beans
I bunch of spinach – chopped
1 onion – diced
4 tomatoes – diced
2 cloves of garlic – crush and finely chopped
½” piece of ginger – finely chopped
Cilantro for garnish – chopped
Oil – 4 tsp
Spices
Turmeric – 1 tsp
Dhania jeera powder -2 tsp (powder of coriander and cumin)
Cumin seeds – 1tsp
Chili powder – optional – (only use if you want to add some heat)
Garam masala – 1tsp
Salt to taste
How do you make it?
- Add oil into the pan, and let it get hot.
- Put the cumin seeds into the hot oil – this will make them spatter a little.
- Then add ginger and garlic, sauté for a quick minute.
- Next add the onions and stir-fry for 3-4 minutes.
- Add turmeric to onions and sauté for about 5 minutes; make sure the onions get slightly transparent.
- Next add the diced tomatoes and stir for around 2-3 minutes.
- Add the spices – dhania jeera powder, Garam masala and salt.
- Now you will have to reduce the heat to simmer and continue cooking the tomatoes till the oil separates (the oil will slowly leave the side, or you will start seeing a shiny glaze on the tomatoes)
- Once the oil separates, add the spinach and keep stirring – cover the pan for a few minutes and the spinach will cook.
- Add the garbanzo beans and cover again and cook for about 10 minutes stirring occasionally – with medium heat.
- Garnish the dish with the chopped cilantro
- Enjoy with Nan or rice!
