I credit my mom for teaching me this quick and delicious recipe. An easy dish that you can make in about half an hour, it can be served with a salad and/or with papad.
Ingredients:
2 medium tomatoes
1 cup basmati rice ( wash your rice)
Cumin seeds (jeera)
1 tsp trumeric powder
1tsp chilli powder( you can omit this if you don’t like spicy)
I tbsp oil
Salt
Preparation:
- Dice the tomatoes, into cubes (see image)
- Take a pot which has a lid ( if you don’t have a pot with a lid you can use a plate to cover your pot)
- heat 1tablespoon oil in the pot.
- After the oil is hot add the cumin seeds and they will sputter a bit.
- Next add the tomatoes and stir them around, cook them for about 4-5 minutes on medium heat, you will see them release their water.
- Add 1 tsp turmeric and 1 tsp chili powder and salt to taste
- Next add the one cup of rice and stir gently.
- Add 1 and 3/4 cups of water ( normally the proportion to rice and water is 1:2 but since tomatoes release water you want to add slightly less than 2 cups for the 1 cup of rice so it does not get too wet)
- stir and cover the pot – reduce heat to low/simmer
- Let it cook for around 15 minutes – you will start to smell the rice.
- turn off the stove and let sit for 10 minutes
- Garnish with some finely chopped cilantro.
That’s it , super easy and simple tomato rice.
