Sometimes when you are busy you may want to have a quick meal or a snack but don’t have the time. At that time a quick sandwich may be an answer.
This hearty sandwich can be a refreshing change to your meal routine.
Ingredients:
Medium cut bread – 4 slices
Tomato Large – One
Cucumber Large – One
Baby Spinach – 10 leaves
Tofu – 2 Slices (3” x 2”)
Vegan Mayonaise
Pepper powder
Salt to taste
Method
a. Place the tofu slices (cut to the size of a pattie) on a griddle, add 2 tsp of oil and keep on medium fire. Let it get brown on both sides (10 minutes). Take out sprinkle with salt and pepper and keep aside.
You can marinate your tofu slices before your cook them if you want.
b. Cut slices of tomato and cucumber and keep aside.
c. Take a slice of bread and place on cutting board. Spread some vegan mayo, place 3/4 tomato slices on it followed by 3/4 cucumber slices. Next place the baby spinach leaves (about 6).
d. Sprinkle some pepper and salt.
e. Now place one tofu slice on top.
f. Cover with another slice. Your sandwich is ready.
g. Cut the sandwich in half .
