Veggie pakoras are a wonderful and healthy tea time snack. Can be prepared quickly (20 minutes). Excellent on a rainy afternoon!!
Ingredients:
Shredded Swiss Chard – 200 g
Shredded Bottle Gourd (Squash) – 150 g
Finely chopped Onion – 150 g
Gram Flour (Besan) – 150 g
Rice Flour – 100 g
Chilli powder – 1/2 tsp.
Turmeric powder – 1/2 tsp.
Amchur (Mango) powder – 1 tsp.
Baking Soda – 1/4 tsp.
Salt to taste
Oil for frying
Procedure:
a. Take a food processor, fit the shredder attachment. Add the Swiss Chard after cleaning it thoroughly. Turn the food processor on and shred finely. Keep aside.
b. In a similar way add cut pieces of bottle gourd (after cleaning) and shred finely. Keep aside.
c. Alternatively, you may use a manual shredder or chop the above finely.
d. Add the shredded swiss chard, bottle gourd and chopped onion in a vessel. Add the Gram flour, chilli powder, amchur powder, turmeric powder and baking soda.
e. Mix them thoroughly. A better way is to knead it. If the mixture is dry, add water (about 5 -8 tablespoons) very little at a time, till the mixture is of a smooth and dropping consistency, make sure the batter is not too runny. Keep it aside for 15 minutes.
f. Take a frying pan, add the oil and set it on medium heat.
g. To test if the oil is hot drop a tiny amount of the mixture in the oil. If it rises quickly to the surface the oil is hot and ready.
h. Using a spoon and your finger or scoop the batter into the oil with another spoon – drop small quantities of the mixture in the oil and fry the pakoras till medium brown.
i. Remove the pakoras from the frying pan and place on a tissue paper
Your Veggie pakoras are ready to eat! You may like to use a chutney or ketchup or sauce as a dip.

Is there anything I could substitute for the mango powder? I’ve never heard of that before.
Yes, you can use a little lemon juice. Mango powder or Amchur can be bought at an indian store it is dried raw mango powder and is tart like lemon.
