Here is a quick recipe that is healthy, nutritious, tasty!
Ingredients:
Kale Leaves – 50 g. Finely chopped
Onion – 1 nos. – 125 g – chopped
Tomatoes – 1 large – 150 g, diced
Green Chilli – 4 nos. chopped
Ginger – 1″ piece cut into small pieces.
Jeera – 1 tsp
Turmeric Powder – 1 tsp
Sambar Powder – 1 tsp
Pomegranate Molasses – 1 tbsp.
Olive Oil – 3 tbsp
Salt to taste
Procedure:
a. Clean the Kale leaves thoroughly in water to remove any dirt. Drain the water.
b. In a food processor. add the kale, diced tomatoes, chopped chillies and ginger and blend coarsely. Keep aside.
b. Take a wok, add 3 tbsp oil and place over medium fire. When oil is hot, add jeera and onion and saute. When onion turns brown, add the kale mixture (kale, tomato, chilli and ginger) and stir. Add the turmeric powder, sambar powder, pomegranate molasses and salt. Cook for 10 minutes, keep stirring. Check if the kale has become tender. otherwise cook for another 3 minutes.
c. Reduce heat and and let it simmer for 2 minutes.
d. Remove from fire. Your Spicy Kale Dip is ready!
Eat with rice, quinoa, cauliflower rice, roti, naan or bread. You may also use it as a dip to go with chips. Enjoy!!
