Ingredients:
Swiss Chard Leaves – 250 g. Finely chopped
Onion – 2 nos. – 150 g – chopped
Tomatoes – 2 large – 250 g, diced
Green Chilli – 2 nos. chopped
Turmeric Powder – 1 tsp
Curry Powder – 1 1/2 tsp
Raw Peanuts – 150 g (Caution – ensure you do not have peanut allergy, otherwise you may substitute peanuts for shelled walnut).
Coconut Milk – 200 g.
Pomegranate Molasses – 3 tsp.
Olive Oil – 3 tbsp
Salt to taste
For masala:
Take a food processor, add the diced tomatoes, chopped chillies, and peanuts and blend coarsely. Set aside.
Procedure:
a. Clean the Swiss Chard thoroughly in water to remove any dirt. Drain the water and finely chop in a food processor. Keep aside.
b. In a wok, add 3 tbsp oil and place over medium fire. When oil is hot, add onion and saute. When onion turns brown, add the masala (tomato, peanut, chilli) and stir. After 3 minutes, add 150 g of the coconut milk, turmeric, curry powder and salt. Cook for 3 minutes. check that the mixture is moist and not very dry.
c. Add the chopped Swiss Chard, stir well, cover the wok, reduce the heat and allow to cook for about 10 minutes. Occasionally keep stirring. Add the remaining coconut milk (50 g) and let it simmer for 5 minutes.
d. Remove from fire. Your Swiss Chard Masala is ready!
Let the dish sit for 10 mins. Eat with rice, quinoa, roti, naan or bread. Enjoy!!
